Chicken Muffins?

It may sound a little odd, but these aren’t the bread or cake-like muffins you might be thinking of.

No, these muffins are perfectly portioned breakfast cups held together by good old-fashioned eggs.

I love using eggs on Keto, and I’m always armed with recipes like this for when I hear people complaining that the diet is too expensive.

It can be, but it definitely doesn’t have to be. Eggs are one of the most frugal food purchases, and this recipe yields 12 servings, so it goes a long way.

Let’s Talk Thyme

The use of thyme puts a little twist on what might otherwise be an ordinary chicken egg muffin.

If you don’t use a lot of thyme in your cooking, this recipe might convince you to use it more often.

Thyme has a warm, minty taste that doesn’t overpower a dish. It’s versatile, and pairs as well with fruit as it does with meat or eggs.

Fresh thyme is awesome, but dried thyme works too. If you do have to use dried thyme, you’ll want to use less. Two teaspoons should work in these muffins.

If you’re using fresh thyme, make sure you remove the leaves from the stem before chopping it up. You should be able to pull them off easily by just pinching it at the top and running your fingers down the stem.

If you don’t toss the stems, you’ll be wondering why your muffins have tough, chewy strands in them. It’s not a good deal. Trust me.

Thyme was a utilitarian herb back in the day. It’s been used for embalming, burnt as incense, given as gifts, placed on coffins, and placed beneath pillows to chase away nightmares. Like many herbs, it’s also been tapped for supposed medicinal purposes.

A savory perfectly portioned breakfast delight!


  • 1 chicken breasts, diced
  • 2 slices of bacon, diced
  • 1 Tablespoon (15 ml) coconut oil, to cook the chicken and bacon with
  • 1 carrot, grated (squeeze excess water out)
  • 8 eggs
  • 1/2 cups (120 ml) coconut milk
  • 2 Tablespoons thyme, chopped
  • Salt and pepper, to taste


  1. Preheat oven to 350 F (175 C).
  2. Add coconut oil to a frying pan and brown the diced bacon and chicken.
  3. Fill a large mixing bowl with the bacon, chicken, carrots, and thyme and season with some salt and pepper.
  4. In a bowl, whisk the eggs and coconut cream together.  Combine with the chicken and bacon mixture.  Pour into 1 muffin tray.
  5. Bake in the oven for 25-30 minutes.
