Tips for Keeping Your Eggs from Sticking
As you can see from the photos, this recipe might be a bit of a flop if your egg doesn’t come out well. Nothing against scrambled eggs, but they’re a little bit tricky to hold!
You may be lucky enough to have a go-to non-stick pan. Kitchen technology can be a wonderful thing. But if you’re not living in a Teflon paradise, take heed.
Heat up the pan before you add anything. Once hot, you can add your fat. You might want to start the stove on high heat, and then reduce the heat to medium or even low when you add the oil.
For this recipe, I chose avocado oil. This oil has a high smoke point and mild flavor. I think it complements eggs nicely.
Wait to whisk the eggs until you’re ready to put them in the pan. Dump the whisked eggs into the warm pan immediately.
Place a lid on top of the pan. A clear glass lid is ideal, but you can make do with a solid pan lid as long as you’re diligent about checking it often for doneness.
Be patient. If you make your move too soon, you’ll break the egg and be left with scrambled eggs.
Let your egg “pancake” cook completely before removing it from heat.
Since you’ll likely have to cook the egg part of this recipe in batches, repeat the same process for a perfect result.
Get the pan nice and hot again, sizzling hot, before adding more oil. A hot pan and cold oil is your ticket to success with this recipe.

A handy little egg-based wrap
- 4 slices of ham
- 1 cucumber, sliced thin
- 4 eggs, whisked well
- 2 Tablespoons (30 ml) of avocado oil, to cook with
- Add 1 teaspoon of avocado oil to a frying pan on low to medium heat and spread it around with a towel.
- Add 1/4 cup of the egg mixture to the frying pan and roll it around to spread it thin.
- Place a lid on top and let it cook until the base is cooked (approx. 2-3 minutes).
- Repeat in batches with the rest of the egg mixture.
- Create rolls with the egg pancakes, slices of ham, and cucumber slices.
