How to Make Keto Sweets
Sugar and sweetness and carbs, oh my! While you certainly can’t enjoy a slice of traditional lemon meringue pie without consequences to your ketosis, there are ways to eat around the troublesome ingredients.
You can have your cake and eat it too, so to speak.
There are tons of sweeteners available to step in for sugar. But which ones are right for you? And which ones are right for this recipe?
Stevia is one sweetener that is called for in this fat bomb recipe. Stevia is super sweet (as much as 200 times sweeter than sugar!) and has been linked to lower blood sugar levels.
Stevia is Keto and comes in both powder and liquid forms. Use only a very small amount of this potent sugar-swap. Otherwise, you’ll quickly learn there is such a thing as too sweet!
The other sugar substitute used for this Keto dessert is erythritol. This sugar alcohol is less sweet than sugar and stevia, but it’s still plenty sweet.
It also has studies demonstrating stable blood sugar levels in people who use it, making it another good option for Keto.
That said, you shouldn’t go overboard. Some people experience digestive upset when they eat significant amounts of sugar alcohols.
Erythritol is one of the better-tolerated sugar alcohols, however, so eating occasional desserts and baked goods sweetened with it shouldn’t cause you any trouble.
Sometimes in Keto baking, you need to get creative. Oftentimes I’ll use a mix of Keto flours to get the right consistency.
In this recipe, I use a combination of sweeteners and lemon juice to fool the taste buds into thinking they’re getting a tasty pie.
A half a cup of erythritol and just a hint of stevia does the trick beautifully.

Bite-sized balls of lemon meringue
Ingredients
- 4 egg yolks, whisked
- 2 lemons, juice and zest
- 1/2 cup (120 ml) water
- 1/2 cup erythritol + stevia
- 2 Tablespoons (30 ml) coconut oil
- 1/2 cup (120 ml) coconut cream
- Dash of salt
Instructions
- Add the lemon juice and zest to a small pan with the 1/2 cup of water.
- Whisk together the egg yolks and sweetener and add to the pan on medium heat. Stir for a few minutes until it starts to thicken.
- Remove from the heat and pour through a sieve into a mixing bowl. Stir in the coconut oil, cream, and dash of salt.
- Pour into silicone molds or ice cube trays.
- Freeze for 8+ hours.
