Beef stew is the quintessential winter dish, but you don’t want to stray from your diet. This Keto instant pot beef stew gets you exactly what you want, without all the carbs.
The Problems With Stew
It’s filling, it’s delicious, and it warms you to the core. So what could be wrong with a little beef stew?
A lot, if you’re Keto.
That thick, gravy-like broth is typically created using flour or cornstarch. Flour is of course not even remotely Keto, and cornstarch actually has starch in the name, a pretty big clue you shouldn’t be eating it.
Another item that can thicken stew is potatoes. While everyone loves plump potatoes floating in their dish, the starchy tubers don’t get an invite to your Keto stew.
Another challenge with stew is time. The beef used for stew needs to cook for a while to get tender. And as much as I love stew, I rarely have three hours to dedicate to dinner, especially on weeknights.
Even though stew poses a couple of challenges for your Keto diet, it still has a lot to offer. Let’s talk about how to make it work.
How to Make Keto Stew
First, the time issue. If you have an instant pot, this stew will be perfectly cooked in about an hour – a big-time saving compared to the stovetop.
You can still make this in a slow cooker or stovetop if you prefer, but you’ll need to give it more time. That said, the instant pot will change your life. Get one!
To achieve a thicker broth, this recipe uses a lot less liquid than many others. Just a cup of beef broth is required, along with a little gluten-free tamari sauce or coconut aminos.
Mushrooms, not always added to stew, offer a little more texture and chunkiness in the absence of potatoes. I like mushrooms in a dish like this because they act like little sponges that soak up the flavor around them.
