First, the time issue. If you have an instant pot, this stew will be perfectly cooked in about an hour – a big-time saving compared to the stovetop.
You can still make this in a slow cooker or stovetop if you prefer, but you’ll need to give it more time. That said, the instant pot will change your life. Get one!
To achieve a thicker broth, this recipe uses a lot less liquid than many others. Just a cup of beef broth is required, along with a little gluten-free tamari sauce or coconut aminos.
Mushrooms, not always added to stew, offer a little more texture and chunkiness in the absence of potatoes. I like mushrooms in a dish like this because they act like little sponges that soak up the flavor around them.

Ingredients
- 2 lbs (1 kg) of beef stew chunks
- 2 carrots, peeled and chopped
- 2 small tomatoes, chopped
- 1/2 medium onion, diced
- 1 cup (240 ml) of beef broth
- 2 Tablespoons (30 ml) of gluten-free tamari sauce or coconut aminos
- 3 mushrooms, chopped (optional)
- 2 Tablespoons parsley, chopped
Instructions
- Add all the ingredients into your pressure cooker or Instant Pot.
- Close the lid securely and press the Stew option on your Instant Pot. It should cook it for around 1 hour.
- Open the lid carefully after depressurizing.
- Pour into bowls and top with chopped parsley.
