Sometimes, let’s face it, the only thing that will do for breakfast is a nice, warm, thick slice of banana bread – bacon and eggs can take a day off! Not only does banana bread inspire us to get out of bed in the morning, along with a steaming mug of coffee or herbal tea, it may also brighten our entire outlook on the day. Now that is a pretty powerful slice of Paleo bread!
To be healthy in mind, body and spirit is, in part, to find balance in the ingredients we are consuming. Naturally, we will be wanting to avoid refined sugars, and you’ll be happy to know that you’ll find none of that here. The only sweetener in this recipe are the bananas themselves. One word of advice, choose very ripe bananas for your bread. If they are gaining black spots, or are more black than yellow, you are on the right track. Not only are they easier to mash, but the flavor is also superior too. Of course, it may all be a matter of opinion. Try it and find out, it never hurts to bake two loaves!

Paleo Banana Bread Recipe

Ingredients
- 1 cup almond butter
- 1 cup almond flour
- 3 bananas, very ripe
- 2 eggs
- 1 tsp. baking powder
- 1 tsp. baking soda
Preparation
- Preheat oven to 350 F.
- In a bowl, mash the bananas with a fork, then add the almond butter, almond four and eggs; mix well.
- Next, add the baking powder and baking soda and combine well.
- Place into a lightly greased 9×5 loaf pan and bake for about 35 to 40 minutes, until a toothpick inserted in the middle comes out clean.
