Slow Cooker Curried Cauliflower

Slow Cooker Curried Cauliflower Recipe

Ingredients

  • 1 head cauliflower
  • 1 cup onion, chopped
  • 2 tbsp. ginger, minced
  • 2 tbsp. red Thai curry paste
  • 1 1/2 cups vegetable broth
  • 1/2 cup coconut milk
  • 1/4 cup fresh basil, finely chopped
  • Salt and pepper to taste

Preparation

  1. Cut cauliflower into large florets.
  2. In the slow cooker combine the cauliflower, onion and ginger.
  3. In a small bowl, whisk the broth and curry paste together; pour over the vegetables in the slow cooker.
  4. Cook on high for 2 hours and 30 minutes.
  5. Once cooked, mix in coconut milk and sprinkle with fresh basil.
